The story of four litres of whisky, one American oak cask and a free morning.
If you read my previous post about this cask you know how it ended. If you don’t, I will try to be brief about it, I fucked spoiled two awesome Laphroaig 10 years old Cask Strength by ageing it a bit more of what it was needed.
So, now that you know where we came from, keep reading about what I did.
Share your thoughts! This last Christmas I got a bottle of DYC 8 años as a present and it haven’t been till now that I have found a chance of opening it.
Although DYC is the best selling ( even over Scotch whiskies ) whisky on Spain I haven’t had many chances of tasting it ( shame on me! ). It is really hard to find samples of it and as most of you know I have kinda of a logistic problem at home… so no more open full bottles… well, nevermind, I got this one as a present and I thougth it really deserves to be opened.
This dram has a gold-like color.
Nose (82): average. honey, vanilla, spices, citrus. Quite light but with a clean delicious honey aroma.
Palate (83): light, smooth. honey, citrus, vanilla, wood, spices, cinnamon.
Finish (83): short. honey, wood, spices.
So based on other whiskies I have already tasted I rate this DYC 8 years old with 83 points over 100.Quite a surprise. More complex than the standard DYC whisky with more defined notes of vanilla and wood. Not bad at all for a whisky that cost around £7.
On the other hand, it is a bit light and simple. If you have the chance taste the DYC Single Malt as it really shows the lovely distillery character of this southern Balvenie!

Nose (81): more than average. cherry,honey, floral.
Palate (79): light, smooth. cherry, vanilla, citrus, honey, bubblegum.
Finish (75): very short. cherry, citrus.
So based on other whiskies I have already tasted I rate this DYC Red One with 78 points over 100.Today I am tasting a new different thing. It is a cherry infused whisky with a twist: DYC is using Spanish blended whisky to create this liquor. The first of its kind on the spanish market.
Against all the advices I decided to taste DYC Red One straight, although the brand really recommends it as a mixing drink.

Finish (75): very short. cherry, citrus.
So based on other whiskies I have already tasted I rate this DYC Red One with 78 points over 100.Don’t be fooled by the tasting score. This kind of beverages is best enjoyed with mixers.
So how this is expected to be drunk? Like we do it! This is Spain!

Nose (87): strong. peaches, honey, vanilla, wood, citrus.
Palate (90): smooth, oily, powerful. peaches, malt, honey, vanilla, wood, spices, molasses.
Finish (89): long. honey, floral, wood.
So based on other whiskies I have already tasted I rate this DYC 10 year Coleccion Barricas Single Malt with 89 points over 100.
Finally I got time to write down the tasting notes and here they are. I am quite happy of the result. The whisky show has been great and I tried lots of expressions that it is not easy to taste here in Spain.
During the evening at WhiskyLive Madrid, that I spent with Richard Barr of WhiskyIsrael, we tasted more than twenty whiskies so bear with me if last tasting notes are not accurate.

So here are the tasting notes. I am still missing some of them that I wasn’t able to properly write while on the show.
Before attending the show, I meet Richards Barr, a member of Whiskyisrael that was also attending the show and we went there together after having a tasty Spanish lunch.
The painting’s content, presentation, and emotional force secure its status as a groundbreaking, archetypal image of the horrors of war. Although it draws on many sources from both high and popular art, The Third of May 1808 marks a clear break from convention. Diverging from the traditions of Christian art and traditional depictions of war, it has no distinct precedent, and is acknowledged as one of the first paintings of the modern era.
According to the art historian Kenneth Clark, The Third of May 1808 is “the first great picture which can be called revolutionary in every sense of the word, in style, in subject, and in intention”.
The Third of May 1808 has inspired a number of other major paintings, including a series by Édouard Manet, and Pablo Picasso’s Massacre in Korea as well as his masterpiece Guernica.
Irregular Spanish forces considerably aided the Spanish, Portuguese, and British armies jointly led by the 1st Duke of Wellington, who first landed in Portugal in August 1808. By the time of the painting’s conception, the public imagination had made the rioters symbols of heroism and patriotism.
So which better rebel whisky to chose than DYC. DYC whisky is marketed to be low budget and is popular in Spain as it is much cheaper than Scottish, Irish or American whiskies. It is designed to be mixed with non alcoholic beverages and be easy drinking in the hot weather. This regular DYC release is a blend of malt and grain whiskies that have been matured in crianza red wine casks.
DYC, like the guerrilla members, isn’t an outstanding whisky but add two rocks and a coke and enjoy the hot spanish night!.

This dram has a white-like color.
Nose (76): inexistent. sweet, honey, vanilla, alcohol, peaches, cherry. First nosing data is innacurate as the previous tasting sheet lacked of this field.
Palate (88): . sweet, honey, vanilla, malt, wood, cherry. Bouquet data is innacurate as the previous tasting sheet lacked of this field.
Finish (76): no finish. vanilla and wood. Finish length is innacurate as the previous tasting sheet lacked of this field.
So based on other whiskies I have already tasted I rate this DYC 5 year with 80 points over 100.
DYC stands for Destilerias y Crianza del Whisky ( distilling and maturation of whisky ) and it is an enterprise created in 1958 by Nicomedes Garcia Gomez. He started working on his father’s humble distillery of liquours at Valverde del Majano in Segovia, creating in 1919, with just only 18 years, Anis Castellana.
Nicomedes was a bussinessman and started all kind of things like a bus company, a marketing agency, a ships company. But he started making whisky just by bad luck.
In 1929 a batch of Mahou beer was rejected by a client because it was faulty. So instead of dropping the beer, he distilled it and stored in oak butts. After three years he gave a try to the potion and he realized that it wasn’t that bad at all, so he spent all the war drinking that whisky and started up the interest in distilling whisky.
In 1955, after being travelling around Scotland he talked with some friends and they founded a whisky destillery at Palazuelos de Eresma on the place where the old Marques del Arco’s mill was standing. The place was choosen for the great quality of the water supply from the river Eresma, the good climate for whisky maturation so near the sierra de Gredos and the near supply of good quality barley from the fields of Castilla.
The first distillation started in February of 1959 after having fought to change the law that forbid distillation of malt in Spain. It wasn’t till 1963 when the firsts bottles were made available to consumers.
The DYC distillery includes the distilling factory, a bottling plant and a warehouse for maturation.
DYC began to grow exponentially and by 1987 its sales stock up to 40 million € and owned the 46% of the spanish market. DYC even bought a scottish distillery, Lochside, to secure an extra supply of whisky to create their blends.
In 1989 DYC was sold to Pedro Domecq group and at a later time sold again to Beam Global.
DYC uses a double distillation process similar to scotch whisky. The mash is distilled in pot stills made with the same techniques than scottish ones.
For the grain distillation, that is done in Valverde del Majano, DYC uses a column still. The grain is mainly corn.
Later whisky is usually matured in american oak barrels of 190 litres that contained bourbon before. The angel’s share is around 3%.
Malt whisky is later blended with grain whisky prior to bottling. Bottling is also done at Valverde del Majano on the distillery plant.
DYC has now two plants in Segovia, with around 100 workers and produce annually around 2.3 million litres.
