The ageing process is through traditional criaderas y soleras with 500 litre American oak casks filled to five-sixths and arranged in layers of three to four. The company produces three different ranges of sherry, from the classic Romate range to the Reservas Especiales through to La Sacristía—the company’s oenological treasures. The winery produces an extremely limited reserve of very old wines – some of which are so old that nobody remembers their age – that traditionally have been reserved for the family’s consumption. Made from century-old soleras, these oenological treasures are an exclusive privilege that Sánchez Romate Hermanos occasionally offer to their best customers around the world. Lovely, light, lively golden colour. Intense almond nose with hints of oaky spice and just a touch of orange. The palate has plenty of life with nutty almond flavours, slightly salty but well-balanced acidity and a good long finish that has a surprisingly light touch for a 30 year old sherry. Carries the official VORS stamp.
