Santeria is made using new-make spirit from Charleston-based Rational Spirits, sent to California for maturation in Lost Spirits' accelerated ageing reactor (which ages spirits in a few days what would take years in wood). The result is a rum with notes of coffee, dark chocolate, walnut and clove.
